Winter Wings of the Future

Rough Cooking > Pheasant in Sherry Orange Honey Sauce

This week the Canada In The Rough™ team take in some fast paced pheasant action at Ontario's Luther marsh and then examine the efforts of the many volunteer groups that are attempting to re-establish a self sustaining population of wild pheasants in Southwestern Ontario.

These wily game birds were nearly eradicated from the Ontario landscape in the mid 1900s, largely through the uncontrolled use of agricultural chemicals. For many years pheasants were pen raised and only hunted in controlled upland areas or private game farms.

Your mouth will water as chef Michael Olson prepares some Pheasant in Sherry Orange Honey Sauce, and Rough Gear takes a look at double barrel shotguns; the preference of most upland bird hunters.

So please join Thomas and his four legged companion as they try to outsmart these wily farmland wizards.
