Corn and Sweet Pepper Chowder with Game Sausage

Serves 4

When the Canada in the Rough crew hits the road to get to the right destination, they need serious fuel, not junk food. In addition to portable snacks like dried fruits, cheese and cured meats, a thermos of hot soup will take the edge off those long haul road trips.

1 cup (250 mL) cooked sausage, diced
2 Tbsp (30 mL) butter
1/2 cup (125 mL) onions, diced
1/2 cup (125 mL) celery, diced
1/2 cup (125 mL) green pepper, diced
1/2 cup (125 mL) red pepper, diced
1 1/2 Tbsp flour
4 cups (1 litre) milk
1 cup (250 mL) Yukon Gold potatoes, peeled and diced
1 cup (250 mL) frozen corn
  salt and pepper

Heat butter over medium heat in a large saucepot. Cook onions, celery and peppers 4-5 minutes, until the vegetables soften. Add flour and cook 3 minutes further, stirring often. Add sausage, milk, potatoes and corn. Season with salt and pepper. Bring to a simmer and cook 20 minutes to ensure that all the vegetables are tender. To finish, check the salt level and rinse the thermos with piping hot water to pre-heat it. Fill the thermos up, seal and hit the road.
