Caribou Tenderloin Stroganoff

Caribou Tenderloin Stroganoff

Stroganoff is a familiar dish that is easily prepared using tender meats, sour cream and your favourite noodle or rice dish. The great thing about this dish is that it is quick and delicious and can be on the table in 20 minutes.

    Serves 2
2 Tbsp 25 mL butter
2 cups 500 mL tenderloin tips, cut into strips
2 cups 500 mL mushrooms, sliced
1 cup 250 mL

onions, diced

2 Tbsp 25 mL brandy
1 ½  cup 350 mL

chicken stock

½  cup 125 mL

sour cream

In a large skillet, heat butter over medium high heat until butter foams. Season tenderloin strips with salt and pepper and sear, in batches for 2 minutes and reserve.

Add mushrooms and onions to pan and cook 3 minutes until tender. Add brandy and chicken stock and bring to a simmer.

Return meat to pan and cook 4-6 minutes.

Add sour cream and check salt and pepper. Serve hot over buttered noodles or rice.
