Rough Pancakes

This mix is ideal for packing into an airtight container or freezer bag to take to camp. The basic recipe can be customized to suit your tastes with spices like cinnamon or nutmeg and the pancakes can be topped with fresh berries or sliced peaches. On the show we served the pancakes with maple syrup glazed venison sausage and fried eggs. What a start to the day!

• Blend together flour, baking powder, sugar, salt and milk powder. This can be stored for months in an airtight container. If you wish to add your favourite spice (like cinnamon) add it to the dry mix.
• Add the eggs and liquid and blend together into a batter. Do not over mix.
• Let the batter stand for 5- 10 minutes.
• Melt a little butter in a skillet over medium heat and dollop 2 oz of batter into the pan a few at a time. If you wish to add berries for sliced peaches, add them now.
• When bubbles form on the top of the pancakes and burst, flip the pancakes over and cook for 1 more minute.

Serve a stack with butter and maple syrup!
