Venison Paillard
with Sweet & Sour Onion Relish

  4 portions
4 5 oz venison steaks, trimmed of fat and sinew (from the loin)
1 oz olive oil
1 tsp fresh thyme leaves
salt and pepper to taste
  1. flatten venison steaks by pounding between oil plastic wrap
  2. season with thyme, salt and pepper
  3. grill 1-2 minutes per side over a hot grill
 
Relish
1 large white onion, diced
1 oz olive oil
2 Tbsp brown sugar
2 Tbsp balsamic vinegar
salt and pepper to taste

  1. cook onion in oil over medium heat until translucent and soft
  2. add sugar and cook until sugar melts into a syrup
  3. add vinegar, bring to a boil and turn off heat
  4. season with salt and pepper and spoon over grilled meats
