Deep Fried Turkey

An outdoor deep fryer can be used to deep fry a wild turkey. When using an outdoor deep fryer, carefully follow the manufacturer's instructions; during cooking, don't leave it unattended. The cooking time is quick. For example, a 15 lb. turkey will cook in approximately 45 minutes!

Preheat oil between 350°F and 375°F.

Rinse the turkey and pat dry with paper towels. Rub liberally with a spice rub mix. For several options, see the segment "SPICE RUBS". Lower the turkey into the hot oil and cook for about 3 minutes per pound, or until the internal temperature reads 180°F. The spice rub will make the skin look dark - don't be fooled. Use the correct internal temperature to determine cooking time, not the skin colour.

Remove the turkey and brush with maple syrup. Carve and serve with fresh squeezed lemon.
